A light but nutritious quiche is the ideal opportunity to fill up the folk who want more, or just enough for those who want to feel comfortable.
Feta and pumpkin quiche
Pastry
- 1 cup plain flour (gluten free)
- 125g cream cheese
- 125g butter, softened
Filling
- 500g pumpkin, cubed and roasted
- 2/3 cup cream
- 180g feta cheese
- 3 rashers bacon, chopped
- 1 onion, chopped
- 1 garlic clove, chopped
- 3 eggs
- 2 tbsp parsley (approx), finely chopped
- Black pepper
Method:
►Mix all ingredients together to form a dough and press into tin or dish.
►Fry onion, bacon and garlic together, add roasted pumpkin and mix. Set aside to cool.
►Beat eggs and cream lightly together.
►Crumble feta into egg mixture and add other ingredients.
►Pour into quiche dish, bake for 30 minutes.
