From 11am-3pm on June 26, Bicentennial Park will be awash with food stalls, activities and workshops.
It's being held to celebrate the rich and diverse backgrounds and heritage of Tamworth residents.
Tamworth Regional Council (TRC) and Multicultural Tamworth have joined forces to host the event, using a funding grant from Multicultural NSW and leftover money from the cancelled Fiesta La Peel last year.
But TRC festival and events officer, Crystal Vero, said this wouldn't be replacing this year's Fiesta La Peel in October.
"Fiesta Fusion is going to have a few different elements to what Fiesta La Peel has with a lot of hands on activities and workshops so we want to see whether they're well received and we'll add some more extra elements to Fiesta La Peel in October too," she said.

Multicultural Tamworth's Eddie Whitham said Tamworth's migrants were a vital part of the community.
"You've only got to look at our community to see, without migrants there'd be no food shops," he said.
"So many families have bought their homes here and decided to stay here and I think that's a pretty big thing.
"The town is growing, and that's what we want to see, we want people out on the street, people have been locked up for a year away from events and things and I think this is really what we want to do."
Ms Vero said the number of locals permitted to attend would depend on COVID rules at the time.
"The current NSW restrictions for a controlled outdoors event is up to 5000 people so obviously things can change overnight so it will just depend and we'll obviously watch those numbers so we will work within that," she said.
"We have no exemptions to make it larger than what the current numbers are."
Expressions of interest are now open for stallholders. Anyone interested in being involved is encouraged to book a stall now on the Destination Tamworth website.
