Sweet and crunchy, there’s nothing quite like a date loaf for afternoon tea, smothered in rich butter and washed down with lashings of tea. Serve it to guests who drop by with Christmas wishes.

Date or fruit loaf
- 2 ½ cups dates or mixed dried fruit (or mix of both)
- ½ cup sugar
- 2 tsp bi-carb soda
- 110g butter
- 2 cups boiling water
- 1 cup walnuts or pecan nuts
- 2 eggs , lightly beaten
- 2 cups self-raising flour
- 1 tsp cinnamon
- 1 tsp nutmeg
- 2 mashed bananas (optional)
Method:
►Chop dates or fruit and place in bowl, along with sugar, bi-carb soda and butter. Pour in boiling water and set aside to cool.
►Add bananas (if using) and walnuts to cooled fruit, then mix in eggs and lastly add the flour and spices. Mix well.
►Spoon into 2 loaf or 3 bar tins and bake for about 35min in 170C oven.
►Cool in tin for 10 minutes before turning out.
