When officers arrived they found a 47-year-old man with head injuries.
NSW Ambulance Paramedics stabilised his condition before taking him to Armidale Hospital for treatment.
A 40-year-old man was arrested at the scene and charged with reckless wounding and using a weapon to commit indictable offence.
He was also charged with malicious damage after allegedly defecating in the police holding cell.
It will be alleged during the altercation the man smashed a wooden chair and used a chair leg to attack the victim.
