A man in his 30s was stabbed in his face just after 1pm on Thursday at Thomas Street, West Tamworth.
Three NSW Ambulance paramedic crews and a specialist medical team, including a critical care doctor and critical care paramedic, were sent to the scene shortly after, where they began to treat the injured man.
These types of incidents are frightening for the patient, emergency services and the local community, NSW Ambulance Inspector Anthony McBride said.
"Any type of stab wound has the potential to cause catastrophic injury, our aim is to control the bleeding as quickly as possible," he said.
"Thanks to NSW Police for securing the scene so we could treat our patient in a safe environment."
The patient was transported to Tamworth hospital in a serious but stable condition.

"A man sustained a stab wound to the face," a NSW Police spokeswoman said.
"Detectives attached to Oxley Police District have established a crime scene and commenced an investigation into the circumstances surrounding the incident.
"A man was arrested a short time later and taken to Tamworth Police Station to assist police with their inquiries."
It's the second stabbing emergency services crews responded to today, after a man was stabbed in the neck in the early hours of the morning.
Police arrested a 57-year-old man after reports a 47-year-old man had been stabbed on Cossa Street, West Tamworth.
It is unclear whether the incidents are linked.
