Demand for seafood usually spikes around the holidays, but this long weekend celebration is expected to be busier than usual for businesses.

Seafood suppliers have been left high and dry by grim weather and COVID-19.
"I think more people are supporting independents," Mr North said.
"There's probably less people travelling because of the high COVID numbers and they know there's a big fish shortage this year so they're looking at the independents and specialists."

The limited supply issues felt across the nation have hit home in Australia's country music capital.
"The fresh fish has been very difficult to source in quantity," Mr North said.
"We've managed to get hold of it, but it's just in short supply."
He said seafood stocks have shriveled due to flooding, international demand, and because staff have had to sit out with COVID-19 at the Sydney Fish Markets and other major players.
The family-owned store began selling seafood in 2020 and it's been a winner ever since.
