The 70-year-old man was trapped in the cabin after the southbound truck reportedly lost control and ran off Manilla Road at Red Hill.
The truck travelled down the embankment before it slammed into a large rock about 11am on June 30.
NSW Ambulance paramedics and Fire and Rescue NSW firefighters worked tirelessly to free the man before he was rushed to Tamworth Hospital in a critical condition.
He was then airlifted to Royal North Shore Hospital where he has been treated for the last fortnight, until he passed away on Tuesday.
