The 58-year-old woman died in Tamworth hospital and authorities are attempting to trace how she contracted the virus.
The death was announced on Saturday and takes the NSW coronavirus death toll to 28.

On Friday, the Tamworth local government area still had 12 confirmed cases of COVID-19 - a figure that has remained the same since March 30.
Hunter New England Health (HNEH) has 271 confirmed cases of the infection, but had three days of no new infections before one extra case was confirmed on Friday in the latest round of testing to 8pm on Thursday.
As of Friday, all 12 people to contract COVID-19 in Tamworth have a known source of infection, according to data from NSW Health.
But coronavirus patients in other parts of the North West still have an unknown source of infection.
According to NSW Health, Tenterfield, Gunnedah and Armidale all had stable case numbers of COVID-19 in the last 24-hour testing period, but the source of infection for some patients in these towns remains unknown.
Authorities still haven't been able to trace the source of infection for one patient residing in Gunnedah who contracted the virus.
NSW Health statistics show that as at 8pm on Thursday, Tenterfield and Armidale both have at least one and possibly up to four mystery cases, where authorities cannot trace the source of infection.
