White said he was recruited for the squad by scouts who came to Gunnedah two years ago.
"I've been training four days a week down in Sydney for a while now," White said.
"It's been a lot of fun so far and all the guys I'm playing with are a great bunch of blokes.
"Honestly, I never thought I would make it to this position, but I'm really excited to be here and getting into it."
The Rabbitohs will be taking on under-16 teams representing the other NRL teams during the annual tournament.
"If we make it to the semi-finals, we will be able to go from playing the nine weeks to the full 13 weeks," White said.
"That's certainly the aim at the moment, but we will just have to wait and see how we go."
Playing the majority of his career in the halves, White said he had been tried out in a new position at the Rabbitohs.
"The coaches have been playing me at hooker so far, which has been interesting," he said.
"I have been enjoying it so far.
"At the start I wasn't sure how'd I go, but it's been going pretty well."
Beginning in three weeks, the tournament's format will still allow White to line up for his beloved Gunnedah Bulldogs this season.
"I love playing for Gunnedah, so it should hopefully work out pretty well," White said.
"I've played there since I was in the 5/6 age group and I'm 15 now.
"The club is really special and I'm really looking forward to having a run this season."
White said he wouldn't have been able to represent South Sydney without the support of his family.
"My family have been great and super supportive, especially Mum, who has driven me to Sydney every time," he said.
