Afterwards, she co-wrote her new single, I Could Dance with You.
"I wanted to write a song to say that I'd be there for him," Simmonds said.
"Whether it be for a night, a week or the rest of our lives.
"That I'd be there to hold him safe and help through tough times."
Sadly, the couple recently lost his dad, who Simmonds herself had come to love so much.
The date she had set to release the single ended up being the same day the pair said their final goodbyes and laid him to rest.
"It's been a terribly emotional time," Simmonds said.
"I think that showing you what you're prepared to do for another definitely shows you the depth of your love."
Simmonds will launch her new album Here and Now with a show at Tamworth Country Music Festival.
After her last album earned her a Golden Guitar, Simmonds said she felt some pressure to make this one even better for her fans.
Simmonds brought Allan Caswell and her brother Michael Cole on board for the fourth album.
There's also a duet with John Williamson on the new album, which an absolute dream come true to record for Simmonds.
"John is a legend and he was so beautiful and kind to me, I was just blown away," she said.
"Tamworth is my hometown so it was important to me to release here and also, at the greatest time of the year, the Tamworth Country Music Festival!"
The video clip for I Could Dance with You was shot in Tamworth by Electric Light Films.
Simmonds said she worked worked with the videographer to create the vision she saw in her mind after writing the song.

Simmonds' will officially launch her album Here and Now on January 24 at 10am at Blazes, with a number of other appearances throughout the festival.
