This year's multicultural festival already has culinary delights from 26 countries, while 20 countries will be represented through street entertainment.
Event organiser Carol Hughes said stallholder applications were still open for another three weeks, with the festival being held on October 19.
"We've already got more entertainment registered than last year, but only half the amount of food stallholders register so far," Ms Hughes said.
"Whether someone wants to do something as a hobby, or get your career started and promote your business, everyone is welcome."
Karen O'Brien is preparing for her third Fiesta La Peel. She encouraged other culinary businesses to put their hand up for the festival, after the first one gave her business, Karen's Macarons, massive exposure.
"The business just went 'boom' from there," she said.
"Last year was our second year. We took double the amount of staff and we had a queue a mile long."
