It was just a taste of what's to come at the festival that highlights regional produce and incredible cooking talent.
Fresh on the foodie scene are Gold Leaf Catering, just six months into their operation chef Chris Roach and his business partner Cass McIlrick jumped at the chance to get involved.
"It gets the whole community involved, from local producers to the local cooking talent around town," Mr Roach said.
"It's great for us to get our name out there and get among the community with the locals," Ms McIlrick agreed, "It's all fresh, local, it tastes good."
For two nights during the festival Fitzroy Plaza will be transformed into a food, wine, produce and entertainment precinct, with crowds able to choose up to five delicious plates from Tamworth Vietnamese Restaurant, Don Churros, Gold Leaf Catering and Homestead Coffee Lounge.
Greg Clark and his wife Leone were one of the lucky 30 first-served at the pop-up sample on Thursday.
"I think it's fabulous for our local area to showcase the food, it's a great idea," he said.
"Without doubt we'll be here."

The Fitzroy Plaza pop-ups are just one of a number of events over the 10 day festival, with a long lunch, high tea and picnic on offer.
Tickets are still available at $45 per person and are on April 5 and April 12 from 7pm to 10:30pm.
