“By now the oil was hot, really hot, way too hot. The vapour rising from the wok was shimmering and at the end of the shimmer was a little smoke. Not black smoke, just a hint of dangerous grey smoke. Here comes mistake number three. I think I’ll take that wok for a walk out the back door, and into the cold night air before it bursts into flames. Don’t try this at home.”
