The 24-year-old was arrested on Tuesday morning after a three-day manhunt across the Northern Tablelands by New England police.
Police would not release details of the manhunt on Monday when questioned by The Leader, but revealed the search on Tuesday after several officers saturated the Glen Innes area in search of the person of interest.
The two officers were not injured when the police vehicle was rammed on the Gwydir Highway about 3.30pm.
The officers were patrolling the highway after reports a Toyota Landcruiser utility was stolen from a Strathbogie Rd, Wellingrove property, in the early hours of Friday morning.
Police said as they attempted to intercept it, the stolen vehicle rammed the passenger side of the cop car.
It then sped off along the highway towards Glen Innes.
About 5.15pm the same day, the vehicle again eluded police by driving into a paddock on Strathbogie Road.
Several officers, from as far as Inverell and Armidale, and the dog squad from Tamworth, were called to back up Glen Innes police.
The stolen car was later found dumped, and was seized by investigators.
A 24-year-old Glen Innes man was arrested north of the town about 11.15am on Tuesday and is being questioned by police at Armidale in connection to the investigation.
Police are examining links to the theft of a Rural Fire Service-marked Toyota Hilux.
The utility was stolen from Lang St at Glen Innes about 3pm on Monday.
No charges have been laid but investigations continue.
