The defending champions followed up a 4-2 win over East Armidale on Saturday with a 9-nil drubbing.
They stamped their authority on the game early, Watson slotting a double as they kicked out to a 4-nil lead at half-time.
He then netted all but one of their goals in the second half, Glenn McKnight scoring their ninth and final goal with around five minutes remaining.
Content with his sides performance, Mushies coach Tim Coates paid credit to Joeys and the spirit they played the game in.
They travelled with only 15 players for the two grades, and were pretty well under the pump for most of the first grade encounter.
“We’ve got a hard game against DK (Demon Knights) next week, we didn’t want to lose our structure and shape,” Coates said.
He also looking to get some miles in the legs of some of their returning injured players, which the weekend did.
Saturday was a tougher win. Held to a 3-all draw their last meeting, the Mushies found themselves behind with Easts scoring in the 21st minute.
After asserting a lot of pressure on the Easts defence, the Mushies responded with two goals just before half-time to lead 2-1 at the break.
Jacob McGoldrick then put them two ahead seven minutes into the second half, but East Armidale hit back four minutes later to cut the margin back to one.
The Mushies though quickly settled back into their work and 10 minutes later restored their two goal advantage.
“When the chips are down they just stand up,” Coates said of his side.
“They just play for each other.”
He said Easts play a lot around Brent Pedlow, and was mindful of closing him down.
“He’s a very skillful player and adds another dimension to their play,” he said.
“He got away and caused us a bit of grief but at the end of the day we did okay.”
The two wins keep them level with Norths United in the race for the minor premiership.
Demon Knights meanwhile hit back from a mid-week 2-1 defeat to the Redmen to roll South Armidale 5-1. Coach Evan Quaife said his side were gallant in defeat on Thursday night, and believes it only made them more hungry to overcome the Scorpions on Saturday.
“We played exceedingly well against Norths even though we didn’t get the win,” he said.
“We ended with nine men so we were just hungry today and I thought we would respond from a disappointing result against Norths.”
Stepping up from reserve grade Declan Humphreys scored a double. Sam Constance also found the net twice while Kirk Burton celebrated his first game back for a few weeks with a goal.
“We deserved to win and I am happy,” Quaife said.
